Absolutely delicious!!

Oh holy cow. I made the best thing I've ever made tonight for dinner! It was FANTASTIC. It's Caprese Flatbread Pizza, taken from the Olive Garden website and slightly modified by moi. :)

Ingredients:
1 tube of refrigerated pizza dough (thin crust kind)
1 package of grape tomatoes, quartered
Olive Oil
Garlic Powder
Salt
Pepper
Mozerella Cheese
Parmesean Cheese
Italian Seasoning
Minced Garlic
Miracle Whip/Mayonnaise

What To Do:
First, quarter the tomatoes, toss with 4 tablespoons of olive oil, a healthy dose of italian seasoning, minced garlic, salt and pepper. Set aside. Allow to marinate at least 10 minutes.

Grease cookie sheet. Spread pizza dough on sheet as thin/thick as package recommends. Brush liberally with olive oil. Bake at 350 for 7-10 minutes. Remove from oven. Allow to cool for a few minutes. Optional: while bread is still warm (not HOT!) rub a fresh clove of garlic across surface. (I skipped this step because my garlic was looking yucky today. It made no difference.)

Once bread is cooled completely, spread Miracle Whip across crust. A thin layer is best. Sprinkle a light dusting of garlic powder over the top. Add mozzerlla on top. Drain tomato mixture, spread evenly across pizza. Top with a sprinkle of parmesean cheese. Bake at 350 for another 7-10 minutes. It's done when it's brown and bubbly, with all the cheese melted.



Let me JUST say! This was AMAZZZZZZING. Dave said it tasted like it came from a restaurant, which is high praise from Mr. D. :) Unfortunately, I made chicken and pasta too, so we didn't get to eat as much tonight as we would have liked. Fortunately, I think it will only get better with time. It's chilling in our fridge, waiting for lunch tomorrow. Try it!! You'll love it. It's going to be my new take to people's party food, for sure. (Laura, you'll get some sometime I swear!)

So I am sitting here going cross eyed trying to make a photo book of the summer stuff we did and I see you posted a blog so I take a break and OH. MY. GOSH. If I had the ingredients I swear I would start making this RIGHT NOW. It sounds so good. I think I might just put it on the menu for next week. :)

That sounds soooo fantastic and right up my alley! :-D I LOOOVE tomatoes, but Greg hates them... do you think it would still be good without tomatoes on one side? I'll have to try this sometime for sure! Yum! :-D
